Processing & Variety
The Caturra variety was processed using a method Francisco Mena calls Black Cherry.
After harvesting, the cherries are soaked in water to remove "floaters" (cherries with lower density). They are then left to "rest" in plastic crates in the shade for 4 days ("reposado"). Next, they are moved to African drying beds, where they dry for 4 days. Afterward, they are packed into airtight plastic bags and left to "rest" in a warehouse for 15 days. Finally, they are spread out on African drying beds once more, where they are dried down to a final moisture content of 11%.
